Licorice Root 甘草 Gān Cǎo

Appearance & Aroma

Fibrous, golden-brown root slices with a woody texture and faintly sweet, earthy aroma. The dried roots are extremely hard and durable, capable of lasting for years. When chewed, they release a characteristic sweetness that is far subtler than processed licorice candy.

Subtle, sweet, and earthy—licorice root’s fragrance is gentle and understated. Its famous sweetness is more evident to the taste than the nose. In a sachet context, licorice contributes more through its harmonizing energetic quality than through its aromatic presence.

Classical References

Gān Cǎo is one of the most important herbs in the entire Chinese pharmacopoeia. The 《神农本草经》 listed it as a superior-grade substance, and it appears in a staggering proportion of classical formulas—some scholars estimate over 50% of all recorded prescriptions include licorice as a harmonizer.

Li Shizhen, in the 《本草纲目》, gave licorice one of the most eloquent descriptions in Chinese medical literature: “甘草…协和群品，有元老之功”—harmonizing all the herbs in a formula, with the merit of a venerable elder statesman. This earned licorice its honorific title Gúo Lǎo (国老), the “State Elder.” Zhang Zhongjing’s 《伤寒杂病论》 employed licorice extensively, establishing patterns of use that have been followed for nearly two millennia.
